Maturation in barriques for a period of about two years followed by a further six months in steel tanks. Bottle ageing in a temperature-controlled environment. Intense and absolutely persistent on the nose with aromas reminiscent of ripe cherries, red fruits and violets. In the mouth it expresses all its structure in which the evolved tannic component is highlighted. It favours grilled meats with particular reference to game; ideal on salmi and/or stewed meats. Many other possible pairings, including various mature cheeses.
